How to Make Butter Swim Biscuits

Once the simple and delicious dough is mixed, melt a stick of butter in the microwave. Depending on the microwave-safe bowl you use, this will take about 45 seconds. Keep your eye on it as the butter melts quickly and you don’t want to make an extra mess to clean up if the butter splashes. Prepare an 8×8 or 9×9 square dish with a thin layer of nonstick spray. Then, pour the melted butter in the bottom of the dish. The biscuit dough is now swimming in butter:)

Scoop and drop the biscuit dough over the melted butter. This is easily done with a rubber spatula. Once all of the dough is in the baking dish, gently push the dough around so that it is evenly spread throughout. It doesn’t have to be perfect, but you do want the dough to bake evenly. It’s an easy job, so feel free to get the kids to help with this part:)

  • Don’t Over-Mix – If you over-mix the dry ingredients with buttermilk, the dough can get dense instead of fluffy.

You Will Need

  • 2.5 Cups of Flour
  • 4 TSP Baking Powder
  • 4 TSP Sugar
  • 1 TSP Salt
  • 2 Cups of Buttermilk
  • 1 Stick of Melted Butter (1/2 cup)

Other Supplies Needed

  • 9″x 9″ Baking dish (or something similar) – Just nothing too small or the butter will spill over while baking
  • Non-stick spray
  • Large mixing bowl
  • Spatula

Directions

  1. Mix dry ingredients in mixing bowl
  2. Add in buttermilk (don’t overmix!)
  3. Prepare a baking dish with a THIN layer of non-stick spray
  4. Pour melted butter baking dish
  5. Add dough over the butter and use a spatula to spread the dough evenly
  6. “Cut” the dough into square pieces
  7. Bake at 450° for 25 mins or until top is golden and dough is baked through.
